Abundance on the Farm:
Garlic and Peaches in Full Glory
Late summer brings a rush of harvests, and this year, two crops stand out: garlic and peaches.
Garlic has been growing quietly since last fall, planted before the frost and spending months underground before sending up green shoots in spring. By mid-summer, the bulbs are ready, firm, papery, and full of flavor.
Peaches are the opposite, quick to ripen and quick to disappear. At their peak, they’re soft, fragrant, and best eaten fresh.
These two crops may seem unrelated, but together they represent the range of the season’s harvest, one a long-term investment, the other a fleeting treat. Both are reminders that a farm’s abundance comes in many forms, each with its own rhythm and reward.
Recipe: Grilled Peach & Garlic-Herb Chicken
Ingredients
- 4 boneless, skinless chicken breasts
- 3 ripe peaches, halved and pitted
- 3 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped (or thyme)
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt & freshly ground black pepper
- Optional: fresh basil for garnish
Instructions
- Marinate the chicken — In a bowl, whisk together garlic, rosemary, olive oil, balsamic vinegar, salt, and pepper. Add chicken and let marinate for at least 30 minutes (up to 4 hours in the fridge).
- Preheat grill to medium-high. Brush peach halves with a little olive oil.
- Grill the chicken for 6–7 minutes per side, until cooked through and juices run clear.
- Grill the peaches cut-side down for 2–3 minutes until lightly charred and caramelized.
- Serve — Slice peaches and arrange over chicken. Garnish with fresh basil if desired
