Meet Taylor George, Our New Sous Chef
As sous chef at Sanborn Mills Farm, you’ll see Taylor working closely with head chef Kelly Fahey in the Farm’s kitchen. This is her first professional position after earning her certification at culinary school in southern Florida in vegan and vegetarian cuisine. She has also taught herself to specialize in gluten free cooking as well. She says “being here has allowed me to gain so much knowledge working under Kelly.”
But Taylor’s hardly new to the culinary arts. Growing up in New York, she was raised in a “really” Italian family, which is where she first developed a love of cooking and how food serves to bind family and community.
A sous chef is more than simply an assistant to the head chef. Taylor and Kelly “work pretty evenly when it comes to responsibilities” in the kitchen, says Taylor, but Kelly handles the managerial duties. Taylor adds that one of the things she most loves about using Farm-grown ingredients is “just how fresh everything is and the comfort of knowing where it comes from.”
“With the upcoming season, visitors can look forward to fresh ingredients, innovative and vibrant dishes, and warm and comforting care from the kitchen staff,” she comments.

The foundation of accurate hand tool work is having sharp tools, and the key to successful sharpening is solid technique. This one-day workshop will cover the basics of sharpening a variety of woodworking tools from chisels and planes to card scrapers, spoke shaves, and more. Bring your dull woodworking tools and leave with them tuned up and ready for work. Open to all levels including beginners.

Squire Boots by The Cordwainer Shop
October 24-27

The Cordwainer Shop has been making Squire Boots since the 1940s. Worn by men and women, this classic desert boot is accented with toecaps and heel foxing. Participants will learn basic shoemaking skills such as folding edges, hand stitching, sole lacing, finishing, and burnishing. We will have portable industrial sewing machines to work on to sew boot uppers. Following in the tradition of all fine Cordwainer shoes, they are fully lined with hand sewn leather soles. The Squire Boot is a great way to start shoemaking – clean lines and a classic design with a fit like a dream.

Beginning Spinning on a Spinning Wheel

Throughout human history we relied on the skills of a handful of talented spinners to make every thread for every piece of clothing, flour sack, and sail on every ship. Spinning fibers into thread or yarn is one of the oldest human skills. Today, we practice hand spinning for the joy it brings us through the creation of something beautiful and useful, through the fun of playing with various textures and colors, and for the relaxation of the rhythm when we sit at the wheel.
Enter the world of hand spinning and explore the joy of making your own yarn in this engaging, fast-paced class. You will be introduced to both wheel and drop-spindle spinning, giving you an overview of fiber prep tools, such as the drum carder, with plenty of hands-on practice and coaching. By the end of the day, you will go home with your first handspun yarn and be on your way to years of spinning enjoyment!

Instructor: Donna Kay
Fair Isle is renowned for its tradition of colorful wool sweaters and accessories. Gloves and mitts are still hand knit there today! Students will combine wools in the colors of their choice as they knit a pair of fingerless mitts using traditional stitch patterns. This is an intermediate level class. Students should be comfortable using double-point needles and fingering weight yarn.
