First CSA of the Season!

A few weeks ago, members of the Sanborn Mills Farm CSA received a vibrant and flavorful selection: beets, garlic scapes, cabbage, kohlrabi, and a fragrant bundle of fresh herbs including oregano and sage. These early-season crops are a celebration of the transition from spring to summer—a mix of tender greens and sturdy roots that mark the beginning of months of local abundance. 

CSA stands for Community Supported Agriculture—a model that creates a direct relationship between farmers and community members. By purchasing a CSA share at the start of the season, members help support the farm’s operations and, in return, receive regular boxes of fresh, locally grown produce throughout the growing season. It’s a partnership rooted in shared risk and shared reward—and it’s one of the best ways to eat delicious, nutritious food while supporting sustainable farming. 

RECIPE: Roasted Beets and Kohlrabi Topped with a Garlic Scape and Herb Drizzle.

Ingredients:

  • 2–3 medium beets, peeled and chopped into chunks
  • 1–2 kohlrabi bulbs, peeled and chopped to match the beets
  • 2–3 garlic scapes, chopped
  • A handful of fresh oregano and sage (or just one of the two)
  • 3 tbsp olive oil
  • Salt and pepper to taste
  • Optional: squeeze of lemon juice or a sprinkle of goat cheese

Instructions:

  1. Preheat oven to 400°F.
  2. Toss beets and kohlrabi in 1–2 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 30–35 minutes, until tender and slightly crisp on the edges.
  3. While vegetables roast, blend garlic scapes, herbs, remaining olive oil, and a pinch of salt into a rough pesto-like drizzle (use a food processor or finely mince by hand).
  4. Once roasted veggies are done, spoon the garlic scape drizzle over the top. Add lemon juice or cheese if using, and serve warm or room temp.

This dish is a great side, or can easily be turned into a main with a scoop of grains or a poached egg. Either way, it’s a great way to welcome the season and celebrate your CSA share!
