
Forged Kitchen Knife Workshop with Emiliano Carrillo

There are few tools more essential—or more personal—than a well-made kitchen knife. In this five-day workshop, students will immerse themselves in the craft of forging and shaping a 6”–8” hidden tang high-carbon steel cooking knife, designed to be both beautiful and functional.
Guided step by step, participants will review the fundamentals of forging, grinding, heat treating, and polishing, while also diving into the finer points of effective kitchen knife design. Each student will finish with a polished blade, complemented by a custom multi-piece handle featuring a bolster—whether metal or organic—and a carefully shaped wooden grip. The result will be a one-of-a-kind kitchen tool, ready for a lifetime of use.
This course is best suited for those with some prior forging or knife-making experience, making it an ideal next step for intermediate beginners eager to expand their skills.
The workshop will be led by Emiliano Carrillo, a bladesmith whose work is deeply rooted in history. Emiliano began making knives in 2014 at Hampshire College, where he quickly became captivated by the traditions of Viking Age pattern welding and Japanese swordsmithing. His studies led him to reverse engineer ancient forging techniques through direct examination of historical artifacts in both museums and private collections. To further his understanding, he even took up smelting his own bloomery iron and steel. Today, Emiliano continues to create Japanese-style blades from his hand-smelted tamahagane and Viking-age weapons using historically accurate materials, keeping centuries-old traditions alive through his craft.
By the end of this workshop, students will not only take home a fully finished, hand-forged kitchen knife but also a deeper appreciation for the art, history, and utility behind one of humanity’s most enduring tools.
